The DO Cava has coexisted for years in 23 municipalities of the DOCa. Rioja, and that is why there are a few wineries that produce sparkling DO Cava in our area. But given the great qualitative potential and prestige of this type of wine, in 2016 the technical commission of the Regulatory Council of the DOCa. Rioja en charged a team led by Rafael Vivanco, a member of the family that owns Bodegas Carlos Serres, to study and develop the regulations for the production of quality sparkling wines, finally approved with great consensus in 2017.
